«From Africa to Portugal: Couscous reinvented (16-19th centuries)» is the title of a conference by Isabel Drumond Braga, part of the cycle «Dinning at he Roman Theatre», which each month tackles the subject of food through the prism of Roman culture – after all, the term «gastronomy« has its origins in a cook from Rome.
Closely associated with certain identities, couscous today is a global dish and, since 2020, has been declared intangible heritage of humanity by UNESCO.
